A classic dish originating from the North East of India infused with Persian influence. This tomato based curry is rich with a delightful texture emitting an exquisite fragrance. It’s great with lamb, mince and vegetables adding depth to the flavour along with aromatic spices such as coriander cumin and cloves. Make your Rogan Josh the King of your kitchen.

INGREDIENTS

Spice Pack: Tumeric, Garam Masala (Coriander, Cumin, Cinnamon, Fennel, Ginger, Red Chillies, Cloves, Black Pepper), Cumin.

Whole Garam Masala: Cinnamon Stick, Big Elachi, Small Elachi, Clove.

Chilli Powder: Red Chilli.

Ginger & Garlic: Ginger, Garlic.

Fried Onions: Onions, Vegetable Oil

SERVE: With Naan Bread or Basmati Rice

Recipe (For Internal use): 20g spice pack – 1 ½ Kashmiri Chili, ½ tsp cumin & coriander, garam masala, turmeric

25g ginger and garlic pack

4g Whole spice pack

Instructions

Prep List

You will need the following:

  • 600g chicken, meat or protein of choice cut into small pieces
  • 200g chopped tomatoes -chopped or  blended
  • Handful of Fresh chopped Coriander
  • Salt to taste
  • 2 tbs Vegetable oil or cooking oil of choice

 

HOW TO COOK

  1. Heat the oil in a medium sized pan.
  2. Add Whole garam masala pack and heat for 1 minute
  3. On a medium to low heat add the Pre fried onions, Garlic and ginger paste and protein of choice and keep stirring and sauté for 10 minutes
  4. Add the chopped tomatoes along with the Spice pack and stir well.
  5. Add Chilli powder included to taste and Salt as per your preference.
  6. Cook for at least 20 minutes until fully cooked.
  7. Add fresh chopped coriander leaves
  8. Serve and enjoy.
