Vegetable Soup Recipe

Here is a lovely light meal to delight your family and friends. Soups are healthy and easy recipes. Common throughout the world, this version is a simple vegetable soup recipe with an Indian twist.
Vegetable soup can be made with any number of vegetables you may have lying around the kitchen. Each vegetable will add its own unique taste, so you can experiment to find your favourite combination.
Once you’re familiar with the spices, adjust them to hit the perfect spot on your taste buds.
Cooking Instructions
- Slice the onions and braise in a pot with ghee until light golden brown.
- Add the spices and vegetables and let the spices mix in
- Add the water and allow to simmer slowly for an hour or longer.
- Once cooked, blend the vegetables and keep it on low heat for a further 5 mins.
The soup will be creamy and rich. Garnish with dhania or parsley. Serve with croutons, bread, or toast. For added texture you can add half a cup of noodles or vermicelli broken into small pieces.
Ingredients
1 medium onion
- 1 tomato
- 2 teaspoons ghee/oil
- 1 whole green chilli
- 1 teaspoon salt
- 1 teaspoon ginger/ garlic
- 1 to 2 cups of diced vegetables
- 5 cups of water
- ¼ teaspoon turmeric
- ¼ teaspoon pepper
- 1 stick cinnamon
- A few cardomoms
- Pepper and cloves
- ¼ teaspoon dry chilli powder
