Mushroom Omlette
This simple mushroom omlette recipe is a great solution for when unexpected guests turn up at the worst possible time; when your running low on ingredients.
Obviously, you’ll need mushrooms at hand to make this super-quick recipe. But, in case your mushroom supply is low as well, you can substitute in another ingredient you have.
Nevertheless a quick and tasty egg will surely be a great stomach filler for any guest. Ensuring they enjoy their time as your guest and leave your home satisfied with a beaming smile on their face.
Heat the ghee to fry the washed and sliced mushrooms and onions. When nicely fried, add the rest of the ingredients and cook over a low heat till dry. Set aside
The omlette
Beat the yolks of 4 eggs and blend in 3 tblsp of hot water in between the beating until a lemon colour is achieved.
Add salt and crushed black pepper.
Now, beat the egg whites until stiff and fold them into the yolks.
Heat some ghee in a heavy pan, spread the egg mixture over the bottom of the pan and cook slowly until it is fluffy and begins to set.
Spoon the mushroom mixture over it. Carefully turn over in half. Cook both sides till the egg begins to brown.
Serve immediately.
• 50g button mushrooms
• ½ tsp chillies
• salt and black crushed pepper
• ½ chopped pepper
• 1 tblsp ghee
• 4 tblsp cream
• 1 tblsp grated onion
• 1 tblsp chopped coriander leaves
• salt to taste
